Chicken and waffles more suited to a dinner kind of meal. This recipe uses pearl millings (formerly known as aunt jemima) waffle batter, but adds a lot of flavor and aspects to it.

Dinner Chicken And Waffles (Pearl Millings Upgrade)

Chicken and waffles are genuinely one of my most favorite breakfast dishes of all time (although I ate it for dinner last night).

Sometimes I make my own waffle batter, and sometimes I’ll use an upgraded version of Pearl Milling (I lied, the majority of the time I use Pearl Milling because I’m super lazy).

Also, these are dinner chicken and waffles, hence the parmesan and green onions you see on top. I know it’s a little weird, but trust me, it’s one of those things that you’d expect to hate, but isn’t really that bad.

Ingredients:

Chicken:

  • 1 Chicken Breast (sliced into chicken strips)
  • 1 Egg
  • Flour (as much as you think you’d need for your coating
  • Cornstarch (or potato starch) (as Much as you think you’d need for your coating)
  • Your preferred seasonings (mine are salt, pepper, msg, chili powder, paprika, garlic powder, onion powder, a very tiny bit of chicken chicken bouillon but not too much since I already added MSG, a little bit of sugar, and cumin)

Waffle Batter:

  • 1 Egg
  • 1 Cup of Pearl Milling Company Buttermilk Complete Pancake & Waffle Mix (yields roughly 2 waffles)
  • 1 tsp baking powder or soda
  • 1/4 cup of brown sugar (granulated sugar works fine too)
  • 3/4 cup buttermilk
  • 1 tbsp vegetable oil
  • A little bit of cheese of your choosing (very optional, but I chose a little bit of Italian cheeses. I wouldn’t do mozzarella if I were you…)
  • 1sp Cinnamon powder (optional)
  • 1tsp Pumpkin spice seasoning (optional)
  • 1/2 tsp vanilla extract (optional

Tips:

  • You can brine or marinate your chicken strips a few minutes to a couple hours before you start cooking, but that’s completely optional. Step 1 for chicken strips assumes that you didn’t.
  • You can also air fry the chicken strips, but that changes the macronutrients of this recipe (mainly the fat, calories, and carbs). If you’d rather air fry than deep fry, ignore step 6 and preheat your air fryer to 400°F. Before you put your chicken strips in it, spray them with a bit of oil on both sides (and spray the inside of your air fryer). Air fry for 6-8 minutes on both sides until an internal temp of 165°.

Steps:

Chicken Strips:

  • Step 1: Lightly pat the chicken breast and slice them into equal servings of chicken strips
  • Step 2: Coat your chicken with your preferred chicken seasonings, but reserve some of it for later (you will be adding a little bit of it in your flour and cornstarch)
  • Step 3: Grab 3 bowls with 1 containing flour, the second having 1 beaten egg, and the third with cornstarch.
  • Step 4: Mix in a little bit of the reserved chicken seasoning into your flour and cornstarch.
  • Step 5: With each chicken strip, coat it in flour, then egg, and finally the cornstarch mixture.
  • Step 6: In your deep fryer, set the temperature to 375 and fry for 6-8 minutes, and a minimum internal temperature of 165°F. Set aside to rest

Waffles:

  • Step 1: In a medium mixing bowl (wet batter), whisk together 1 egg, buttermilk, vegetable oil, sugar, and vanilla extract. Be sure not to overbeat.
  • Step 2: In a different bowl (dry mixture), combine 1 cup of the pancake & waffle mix, 1 tsp of baking soda, cinnamon and/or pumpkin spice, and a pinch of salt.
  • Step 3: Incorporate the dry mixture into the wet batter, do not mix it yet though.
  • Step 4 (Optional): Fold in a small amount of your cheese (cheddar, Mexican, etc.)
  • Step 5: Stir the batter gently until combined, and again, don’t overmix. A few small lumps are fine.
  • Step 6: Turn on your waffle iron and let it preheat. Let the batter sit for 5-10 minutes.
  • Step 7: Lightly grease your waffle iron, then poor in enough batter to just cover the grid. Cook until golden and crisp
  • Step 8: Garnish with whatever you prefer! I personally chose a little bit more grated parmesan and chopped green onions.
